Breakfast Bagel

This is more of an idea than a recipe because I'm sure most of you can fry bacon and an egg.

Ingredients:

  • Sliced bagel
  • 2 rashes of back bacon
  • 1 large egg
  • Butter
  • Tomato or brown sauce (optional)
Method:
  1. Lightly oil a frying pan and start frying the bacon
  2. Crack open an egg into the same pan and try to keep it circular (you may want to use an egg ring)
  3. Once the egg has started cooking pierce the yolk and mix it with the white before flipping the egg 
  4. Lightly toast both halves of the bagel
  5. Butter one half of the toasted bagel 
  6. Place the bacon and egg on the buttered half of the bagel and then top with sauce if you wish to.
Serve with water for a healthy start to the day and then sit in front of the TV telling yourself that you aren't actually enjoying Jeremy Kyle (but of course you are).

Bolognese Pasta Bake


(Serves 4)

Ingredients:

  • 200g penne or fusilli pasta
  • 500g beef mince
  • 500g tomato pasata
  • 1 tbsp tomato puree
  • 1 onion (chopped finely)
  • 1 garlic clove (chopped finely or crushed)
  • 1 red pepper (chopped)
  • 2 large carrots (grated)
  • 50g lentils 
  • 50g cheddar cheese (grated)
  • seasoning
Method:
  1. Pre-heat oven to 200°c or 180° fan
  2. Lightly oil a large frying pan and fry the onion and garlic until the onions begin to colour
  3. Place the mince in the pan and cook with the onions and garlic
  4. Boil pasta in large saucepan with lightly salted water
  5. Once mine has browned, put in pepper and carrot and cook for 5 minutes
  6. Add the past, puree, lentils and seasoning (I recommend salt, pepper, basil and oregano - fresh or dried) and leave to simmer for about 10 minutes
  7. Drain the pasta (it doesn't matter if it is not cooked through just yet) and mix into the large frying pan with the rest of the ingredients
  8. Pour or spoon the mix into a large baking dish and top with cheese
  9. Place in oven for 15-20 minutes, or until cheese is bubbling
  10. Serve with a side salad
